The label on a moisturiser says 'glycerin' and nobody blinks. When the same molecule appears on a cake label as 'humectant (E422)', some eyes narrow immediately. Yet the two are the same substance: glycerin, or glycerol as it is officially called in food. This article follows one molecule through two worlds and suggests a calmer way of looking at E-numbers.

What is glycerin and where does it come from?

Glycerin is a colourless, odourless, faintly sweet molecule with a great fondness for water. It can be obtained from vegetable oils (most often as a by-product of soap making) and it can also be produced synthetically; our own bodies make glycerol as they process fats. A certain amount of glycerol circulates in our blood at all times, because it is the backbone of every fat molecule we eat. So it is not some unfamiliar stranger but one of the basic building blocks of biology. Known and used for more than two centuries, this molecule is the quiet workhorse of pharmacy, food production and cosmetics alike.

Which names does it hide behind on the label?

The fact that the same substance is written differently in different aisles is one of the great sources of confusion. Cosmetics use the international INCI system, where the name printed is 'Glycerin'. Food labels give the additive name and code together, so you see 'glycerol' or 'E422'. Alongside these you may spot other descriptions depending on how the product is marketed:

  • Glycerin: the standard name on the ingredients list of cosmetics and personal care products.
  • Vegetable Glycerin: states that the source is plant oil, though the molecule itself is unchanged.
  • Glycerol: the official name in chemistry and food literature, also common on medicine and syrup labels.
  • E422: the identity code in the European additive list, written on food labels together with its function.
  • Glycerin (99.5%) and similar purity statements: seen on bottles of pure glycerin sold in pharmacies.

Its job in cosmetics: catching and holding moisture

In creams, serums and cleansers, glycerin works as a humectant: it pulls moisture towards itself and tries to keep it in the outermost layer of the skin. It is one of the best-evidenced and gentlest ingredients against dryness, and one of the rare substances almost every skin type tolerates well. Overshadowed though it is by expensive 'miracle' ingredients, glycerin remains one of the first names that comes up in dermatology literature whenever hydration is discussed. That is why you see it so often near the top of ingredients lists: it is cheap, proven and safe.

Humectant, emollient, occlusive: the three jobs of moisturising

A moisturiser actually combines three different jobs, and glycerin takes on only one of them. Humectants attract and hold water; glycerin, hyaluronic acid, urea and panthenol belong to this group. Emollients fill in the roughness on the surface and give that soft feel under the fingertips; plant oils and squalane do this work. Occlusives lay a thin cover over the top and slow down evaporation; petrolatum and beeswax are the classic examples. A good formula runs all three together, because attracting water is not enough on its own: the water drawn in also has to be kept from escaping. If a label shows only humectants and your skin is genuinely very dry, there is a fair chance the product will not be enough by itself.

How much glycerin is there in a formula?

In most moisturisers the glycerin content stays in the low single-digit percentages, and it usually sits in the first few places on the list, right after water. Pushing the proportion much higher does not give a better result; on the contrary, it produces a sticky, heavy texture that becomes uncomfortable under make-up. Applying pure pharmacy glycerin straight to the skin is not a good idea for the same reason: glycerin performs best while doing its work within the water phase of a formula, and used neat it can leave exactly the opposite sensation on the surface. In other words, the more-is-better logic does not apply here; what matters is glycerin working in balance with the rest of the formula.

How do the season, heating and humidity affect this ingredient?

The performance of humectants depends on the moisture around them, and this is one of the most practical pieces of information for explaining why a cream feels inadequate in winter. When the air is humid, attracting and holding water is easy; in a closed room with the heating on, or on a dry and windy day, there is less moisture available to draw in. In those periods, formulas that add a covering layer on top feel far more comfortable than a humectant used alone. The difference is obvious across the regions of Türkiye: a light gel is plenty in the humid air along the coast, while the same product can fall short in the dry winter inland. So before changing products, it is worth factoring in the season and the air in the room; sometimes the answer is not a more expensive cream but a simple measure against the air at home drying out.

Its job in food: adding moisture as E422

When the same molecule enters food it acquires an E-number identity: E422. Its job is surprisingly identical, namely holding on to moisture. A cake staying soft for days, Turkish delight not drying out, chewing gum keeping its stretch are often glycerol's doing. The European Food Safety Authority (EFSA) re-evaluated glycerol, found no safety concern at normal use levels and saw no need even to set a numerical daily intake limit, which is about as relaxed as an assessment of an additive gets. Which shelves will you find E422 on?

Glycerol's presence in food is broader than most people assume, because beyond holding moisture it has several side jobs: carrying flavour and colour compounds, adjusting texture and delaying freezing. On shelves in Türkiye you will most often meet it in these groups:

  • Packaged cakes, muffins and soft biscuits: one of the reasons they stay equally soft for days.
  • Turkish delight, jelly sweets and certain coated products: it delays the surface drying out and cracking.
  • Chewing gum: it helps preserve stretch and chewability.
  • Protein and cereal bars: it is among the ingredients that keep a bar from setting rock hard.
  • Flavour and colour blends: it is used as a carrier so these compounds dissolve and spread evenly.

A code frightens, an identity reassures

The lesson here generalises: an E-number is, in truth, less a danger sign than an identity number given to an additive. The EU assigns these codes to approved additives to make tracking and enforcement straightforward. The same double identity exists for other substances too:

  • Vitamin C appears as 'ascorbic acid' on a cosmetics label and as antioxidant E300 in food.
  • Vitamin E is 'tocopherol' in a cream and the E306 family in food.
  • The pectin naturally found in apples is written as gelling agent E440 in jam.
  • Lecithin, naturally present in egg and soya, is emulsifier E322 in chocolate.

Of course this does not mean every additive is equally uncontroversial; there are genuine scientific debates about some of them, and we flag those separately in our reports. But the leap from 'I see an E-number, therefore it is bad' is a false shortcut, as the glycerin example shows. Widely believed things about glycerin that are not true

  • 'Vegetable glycerin is better' is a common belief, but the molecule is identical from either source. The origin only matters for vegan or production preferences.
  • The claim that 'glycerin dries out skin' comes from a scenario in which pure glycerin might draw water from below in very dry air. Because glycerin is used alongside water and oil phases in creams, that scenario is not realistic in everyday use.
  • The distinction that 'E422 is a chemical and glycerin is natural' is wrong. They are two aisle names for the same substance.
  • Saying 'anything with a code is a sign of processed food' is also incomplete; some codes are vitamins and some are substances naturally present in fruit.
  • The belief that 'glycerin clogs pores' comes from confusing it with oils. Glycerin is not an oil but a molecule that loves water.

  • In food: the phrase 'humectant (E422)' explains why a product stays soft for a long time, and is not a quality marker on its own.

  • On both sides: when an unfamiliar name catches your eye, note the product down and look it up later in the ingredient library.
