The truly confusing thing in the dairy aisle is this: the 'sugars' line in the nutrition table never tells you where that sugar came from, and the same line looks identical on a kefir with nothing added and on a ready dessert sweetened spoonful by spoonful. So with dairy the right question is not 'is there sugar' but 'how much of this sugar is the milk's own lactose and how much was put in later'. The split starts there. Below we show how to work that out from the packet, line by line.
Total sugar, added sugar, free sugar: three separate ideas
The three terms look alike but they do not describe the same thing. Total sugar is the sum of all simple sugars in the product and it is the figure printed in the nutrition table. Lactose is inside that total. Added sugar is the sugar put into the recipe during production. It does not appear as a separate line in the nutrition table used in Türkiye, so you have to deduce it from the ingredient list. Free sugar is the broader definition used by the World Health Organization: on top of added sugars it also covers the sugars in honey, syrups and fruit juice, but not the lactose in milk nor the sugar inside whole fruit eaten as it is. When people talk about a daily budget, they usually mean this third definition.

Where does the sugar line sit in the table?
In the nutrition table sugar is not a line of its own. It sits under carbohydrate as 'of which sugars'. The compulsory column is the one given per 100 grams or 100 millilitres, while the portion column is optional and a brand can make the figure look small by keeping the portion small; so when comparing two products you should always read the same column. With drinkable dairy, remember to multiply the per-100-millilitre figure by the volume of the carton: a 250-millilitre carton showing 9 grams of sugar per 100 millilitres carries more than 22 grams on its own. In the family-size version of the same product that sum doubles at a stroke.

The most misread row of this table is 'no added sugar': the phrase guarantees that no sugar went into the recipe, but it does not say the product contains no sugar at all. In a dairy product the lactose stays put, and in a fruit product the fruit's own sugar stays put. Legislation knows this, which is why products that naturally contain sugar must carry a statement next to the claim saying the sugars occur naturally. So seeing 9 grams of sugar on a fruit yogurt labelled 'no added sugar' is not a contradiction. That sugar comes from the fruit and the milk. Set the sugars line of a plain yogurt beside a fruit one, though, and you will often see the fruit version climb to 12-14 grams. Most of that gap comes from added sugar. Conversely, a product on the same shelf labelled 'low in sugar' can still be sweeter than its plain equivalent, because the claim means staying under a defined threshold rather than being low in absolute terms.
What to expect from each product on shelves in Türkiye
The tendencies below vary by brand and recipe and are not exact values. The aim is to know what you will meet on each shelf; the definitive information is always in the table on the packet in your hand.
- Ayran: because the milk is diluted with water the sugars line drops below plain yogurt, but salt is added, so the line worth reading is the salt one.
- Whole and semi-skimmed milk: fat content does not noticeably change the amount of lactose, and the sugars line is close in both.
- Fruit and flavoured yogurts: sugar often sits second or third in the ingredient list, and that ranking alone is a clue.
- Chocolate milk drinks: cocoa powder itself is not sweet, so nearly all the sweetness comes from added sugar.
- Ready dairy desserts (rice pudding, milk pudding, pudding pots): both sugar and starch go into the recipe, so the carbohydrate line lands well above the sugars line.

Sweetened dairy: sugar is down, is the job done?
In recent years shelves have filled with sweetener-based dairy sold under 'no added sugar' or 'high protein' banners: drinking yogurts, protein puddings, light ice creams. Their sugars line really is low. The sweetness comes from sucralose or aspartame. That is an advantage in terms of a sugar budget, but it is not a reason to skip the rest of the label: in some the fat and salt rise, some arrive with a long additive list, and in others the protein claim is achieved by enlarging the portion. Do not confuse lactose intolerance with milk allergy
These two are often mixed up, and when they are, the wrong product ends up in the basket. Lactose intolerance is a digestive matter: the enzyme that breaks lactose down falls short, and the result is bloating and discomfort. Milk allergy is the immune system's response to milk proteins (casein and whey proteins) and has nothing to do with lactose. That is why lactose-free milk is not a suitable product for someone with a milk allergy. The milk protein in it is untouched. Where an allergy is involved, the word 'milk' emphasised on the label is what you look for. - Glucose syrup and glucose-fructose syrup: used for liquid sweetening, and they change the texture at the same time.
- Invert sugar and sugar syrup: chosen to stop crystallisation in ice cream and dairy desserts.
- Fruit juice concentrate: the form that looks natural in fruit yogurts but counts as free sugar.
- Dextrose and maltose: sugar forms obtained from starch, which can be listed separately.
- Honey and grape molasses: traditional sweeteners, and they are not held apart from sugar in the daily budget.
- Maltodextrin: low in sweetness, it lifts the carbohydrate line but may not show clearly on the sugars line.
- Milk powder and skimmed milk solids: not sugar, but because they carry lactose they pull the sugars line up a little.
Does fermentation reduce lactose?
It reduces it partly. During the making of yogurt and kefir the cultures convert some of the lactose into lactic acid; compared with the same amount of milk, the fermented product keeps slightly less lactose, and that is where the sour taste comes from. Their packaging usually arrives with a cartoon character, a calcium banner or phrases about supporting growth. The front can be more persuasive than the back. The job is the same as ever: compare with the sugars line of the plain equivalent in the same category. Because a children's yogurt pot drops to 90 grams the total figure can look small, yet read per 100 grams it may carry more than twice the sugar of plain yogurt. A small pot does not mean less sugar on its own. When two pots are eaten in a day the gap grows again.
How does Nutri-Score see dairy?
Nutri-Score does not put all dairy in one basket: it uses a separate scale for drinkable products, because something you drink and something you eat with a spoon are not consumed at the same pace. A sweetened milk drink can therefore land a harsher grade than a spoonable product with a similar sugar content. Sugar is not the only decider in the scoring. Positive components such as protein and calcium pull the grade up, while saturated fat and salt push it down.
