The 'definite carcinogen' headlines that hit the world press in 2015 suddenly soured our relationship with these products, and ever since the subject has been discussed either with full exaggeration or with full forgetfulness. Yet the scientific explanation behind it sits between the two, and it is not as hard to grasp as people assume. In this article we set out, in measured language, what that headline actually says, what nitrite does, how big the risk is, and which concrete steps genuinely help in the kitchen.
First the definition: which products count as processed meat?
Processed meat is meat altered through salting, curing, fermentation, smoking or the addition of preservatives in order to improve its keeping quality and taste. On Turkish shelves this definition covers sucuk, salami, hot dogs, ham, smoked meat, pastırma and most of the sliced products in the deli aisle. Mince itself, or a packaged fresh steak, does not fall under it; those count as fresh red meat and are assessed under a separate heading. The distinction matters, because these two categories sit in different classes in scientific assessments and are constantly mixed up in the news. The easiest way to tell which category a product belongs to is to look at the ingredient list: if you see wording such as salt, curing salt, preservative or starter culture, what you are holding has been processed.
What does Group 1 mean, and what does it not mean?
The International Agency for Research on Cancer, known as IARC and part of the World Health Organization, classifies substances and habits according to how clear the evidence is that they cause cancer. In the 2015 assessment processed meat was placed in Group 1 and fresh red meat in Group 2A. The critical point gets lost in most news coverage: these groups describe the strength of the evidence, not the size of the risk. Group 1 also contains tobacco, alcohol and sunlight. So the list does not put one substance at the same danger level as another; it only says that the evidence of causation is similarly strong in each case. Sucuk sitting on the same list as cigarettes does not mean one slice of sucuk has the same effect as one cigarette. The classification asks this question: does this thing cause cancer? So how big is the risk?
The estimate reported in the same assessment was this: consuming 50 grams of processed meat every day on a regular basis raises the risk of bowel cancer by roughly 18 per cent. What exactly does nitrite do?
The preservatives we meet in processed meat are sodium and potassium nitrite along with sodium and potassium nitrate; on a label you see them as E249, E250, E251 and E252. These substances do three jobs. The first and most important is microbiological safety: nitrite suppresses the growth of the bacterium behind botulism, which can run a severe course. The second is colour; the reaction that gives meat that familiar pink tone begins with nitrite. The third is flavour and shelf life. So nitrite is not decoration added to production on a whim, it serves a safety function. The debate arises not from that function but from a second reaction: under the right conditions nitrite can combine with certain components of meat to form compounds called nitrosamines, and the cancer concern is really about those compounds.

Are products labelled 'no added nitrite' really nitrite free?
